In 2013, they set about creating a place of GOURMET SHARING when they took over the old inn in Hauts-Buttés where they have designed different ambiances for the first floor and the ground floor. In the early 2020s they started to specialise in the 100%-Ardennes local craft production of aperitifs and natural food products based on wild plants and fruit from their orchards. Take a half-day trip with Geneviève to pick edible plants around the Hauts Buttés.

Bière Bayard

Sucre Rouge, is a mixture of white sugar, water, glucose and natural bright red food colouring. This hot mixture is poured into moulds shaped into animals, characters and a variety of objects, which you can suck. A genuine Ardennes tradition, this know-how has been passed down through the Simon family from one generation to the next since 1925. In fact, when this tradition was popular in the Meuse valley, you couldn’t have a "Saint Nicholas" without some "Sucres Rouges". "This sweet reminds us of our childhood in the 1950s on Saint Nicholas’ day, with your slipper placed close to the fireplace with a carrot for Saint Nicholas’s donkey. The next morning you had the great joy of finding a tangerine with its aroma and flavour like no other, a gingerbread Saint Nicholas and some little red sugar figurines." Today this tradition is perpetuated by Jeannine Simon, following on from her father, Constant Simon, confectioner.
